Cottage Cheese Blondies">Cottage cheese protein brownies are fudgy, rich, and impossibly decadent — and yet they deliver 20g of protein per brownie with only 180 calories. The secret ingredient is, of course, cottage cheese, which when blended into the batter creates an incredibly moist brownie with a dense, fudgy texture that rivals any bakery brownie. You genuinely cannot taste the cottage cheese once it's blended with cocoa powder, chocolate, and a touch of maple syrup. This cottage cheese brownie recipe has converted even the most skeptical cottage cheese critics because the results are just that good. The brownies stay moist and fudgy for days thanks to the moisture from the cottage cheese, and they actually taste better the next day as the flavors meld together. They're perfect for satisfying chocolate cravings without derailing your nutrition goals. Each brownie is packed with protein from both the cottage cheese and optional protein powder, making them an ideal post-workout treat or healthy dessert option. Cut into squares and store in an airtight container for easy snacking throughout the week. These cottage cheese protein brownies prove that healthy desserts don't have to taste healthy — they're genuinely, seriously delicious. Let cool completely in the pan before cutting into 9 squares. They firm up significantly as they cool.
TROUBLESHOOTING
My cottage cheese recipes are too dry
Try adding 1-2 tablespoons more liquid (milk, yogurt, or egg whites). Also ensure you're not over-measuring the protein powder - use the scoop and level method.
They didn't rise properly
Check your baking powder is fresh (test by adding to hot water - it should bubble vigorously). Also, don't overmix the batter as this can deflate the air bubbles.
The texture is rubbery
This usually means too much protein powder or overbaking. Reduce baking time by 2-3 minutes and check doneness with a toothpick.
