INSTRUCTIONS
Blend cottage cheese, eggs, vanilla, and honey until completely smooth. Add oat flour, baking powder, and salt. Pulse until combined.
Pour most of the batter into a squeeze bottle. Mix a small amount of batter with cocoa powder in a separate small squeeze bottle for details and outlines.
Heat a non-stick pan over medium-low heat. Using the cocoa batter, squeeze out the outline and details of an animal face (ears, eyes, nose, mouth). Cook for 30 seconds until set.
Carefully fill in the outline with the plain batter, covering the entire shape. Cook for 2-3 minutes until bubbles form.
Carefully flip the pancake to reveal the animal design. Cook for 1-2 minutes more until golden brown.
Place on a plate and add fresh fruit decorations — blueberries for eyes, strawberry slices for mouths, banana slices for cheeks. Serve with maple syrup.
TROUBLESHOOTING
My cottage cheese recipes are too dry
Try adding 1-2 tablespoons more liquid (milk, yogurt, or egg whites). Also ensure you're not over-measuring the protein powder - use the scoop and level method.
They didn't rise properly
Check your baking powder is fresh (test by adding to hot water - it should bubble vigorously). Also, don't overmix the batter as this can deflate the air bubbles.
The texture is rubbery
This usually means too much protein powder or overbaking. Reduce baking time by 2-3 minutes and check doneness with a toothpick.
